classic dry gin with a twist. Aromatics from vetiver and Geraldton wax. Strong juniper and coriander lifted with a hint of citrus which dries out into a dry, crisp, slightly warming and peppery finish.

001 is trickle distilled through our 500L copper Müller still and rested to allow all the aroma and flavour to settle together in harmony.

We set the charge of the pot high and run through 4 plates and the AROMAT in order to make a crisp refreshing dry gin. It’s perfect for mixing or balanced and smooth enough to sip neat if you feel so inclined.

The Slowing Down Of Time evolves slightly between batches as we cycle through seasonal botanicals and continue to evolve the recipe to our taste.
